The concept of liquor flavor type was first put forward in the preparatory meeting of liquor appraisal held in 1978 (Changsha) before the third national liquor appraisal conference (Dalian) was held in 1979. It is understood that the development of Chinese liquor flavor has a history of 44 years since the concept of liquor flavor was first proposed at the Third National Liquor Appreciation Conference in 1979.

At the preparatory meeting before the third National Liquor Appraisal Conference, experts believed that due to the large number of wine samples participating in the evaluation and the large differences in styles, it was inconvenient to compare with each other. The aroma and taste of traditional liquors in various parts of China are not the same. It is difficult to ensure objective and accurate evaluation of different wines together. In order to make the selection more fair, an attempt was made to evaluate the aroma type, and the liquor was divided into five types: sauce-flavored, strong-flavored, light-flavored, rice-flavored, and other flavors. Liquor with different flavors is divided into two categories: Daqu and Fuqu.

For the first time in this session of wine tasting, liquors were classified according to different aroma types, saccharification agents and production processes: Daqu Luzhou-flavor type, Maotai-flavor type and Fen-flavor type, Bran Koji-flavor type, Maotai-flavor type and Fen-flavor type, rice-flavor type , Other fragrance types and low intensity groups. After 1979, with the inheritance and innovation of liquor brewing techniques and scientific and technological progress, the assessment indicators such as liquor production technology, aroma components, and flavor characteristics were further improved, and the aroma types of liquor were gradually separated from other aroma types.
