It is understood that after the two new national standards for liquor, "Liquor Industry Terminology" and "Beverage Alcohol Terminology and Classification", are officially promulgated in 2021 and finally officially implemented in June 2022, the liquid method liquor and solid-liquid method liquor will be clearly defined. Non-grain edible alcohol and food additives are not allowed. At the same time, flavored liquor is removed from the classification of liquor and classified as blended liquor. This new national standard has accelerated the quality upgrade of popular liquor and further promoted the standardization and regulation of the liquor industry. Yuncang Winery, a member of the China Alcoholic Drinks Association, stated that the new national standard has adjusted the definitions of beverage wine, fermented wine, distilled wine, blended wine, and dew wine. The standard highlights the typical process characteristics of traditional flavor liquor from the aspects of raw materials, saccharification starter, fermentation container, and restrictions on external additions, etc., clarifies that no food additives are allowed in liquor, and extracts flavored liquor from the classification of liquor and belongs to blended liquor; It is clear that non-grain edible alcohol and food additives shall not be used in liquid liquor and solid-liquid liquor.

The new national standard puts forward higher requirements on the quality of liquor products, which not only promotes the improvement of the quality of the domestic liquor industry, but also plays a role in promoting the standardization of the production and operation of liquor enterprises. Liquor shall not use additives (aroma, taste, and color substances not produced by self-fermentation shall not be added), and the aroma type shall be further clarified. The definitions of liquor, rice-flavored liquor, phoenix-flavored liquor, thick sauce-flavored liquor, and Laobaigan-flavored liquor have been adjusted, and the definitions of Jian-flavored liquor, Dong-flavored liquor, and rich-flavored liquor have been added. In addition, the definitions of solid state liquor and liquid liquor have been adjusted. "Using grain as raw material" for solid-state liquor and "using starch and sugar-containing substances as raw material" for liquid liquor are both changed to "grain as raw material". For solid-state liquor, the liquid-state process is clearly adopted, and non-edible alcohol is blended with the liquor base, and the use of food additives and non-grain-sourced edible alcohol is no longer allowed.
