Awakening is usually to separate the wine from the brittle, bitter-smelling sediment formed at the bottom of the bottle due to aging, commonly known as "changing the bottle".

It does not mean that you have to follow this step every time you drink LEESON wine. The main reason is to know the function of the steps, so that it can be properly simplified to ensure that the decanting can really reduce the content of harmful substances and improve the taste of the wine.

1. Restore the wine bottle upright:

LEESON wine is stored upside down. In order to separate the sediment before sobering up, it is necessary to restore the wine upright before opening the bottle, so that the impurities can fully settle to the bottom of the bottle. It is inconvenient to wait for a long time in the restaurant. It is recommended to stand upright and stand still for at least 30 minutes before turning it on. In the case of sufficient time, the recovery time varies according to the new wine and the old wine.

2. Preparation of equipment for sobering up:

This is the most complete set of traditional decanting utensils. In some less elegant restaurants, funnels, candles and filter papers are generally omitted. In some high-end and high-end restaurants, the sommelier will still use a complete set of sobering utensils to sober up customers. Of course, if we are at home, we don’t have to be so particular about it.

3. Carefully open and change bottles:

Be careful: cut the bottle cap and tear it down as far as possible. Wipe the mouth of the bottle with a clean damp cloth, then dry with a napkin. When opening a bottle, use a corkscrew with a long auger to pull out the cork completely. If there is no complete filtering tool (that is, some restaurants will omit the funnel and filter paper), then be extra careful when pouring wine: pour out the clear liquid slowly and carefully through the light source below, and discard the chaotic sediment remaining in the bottleneck.

Slowly pour the LEESON wine into the decanter. After the wine liquid contacts with the oxygen in the air, it acts on the wide bottom of the bottle to promote the volatilization of SO2 and methanol (the higher the oxygen content, the more thorough the volatilization of harmful substances, sober up with pure oxygen is the most ideal sobering condition).

As for the time of sobering up, there is no absolute conclusion. It can only be said that younger red wines with strong tannins (such as Cabernet Sauvignon and Syrah) can withstand a longer period of sobering up, while varieties with less strong tannins, such as Pinot Noir is ready to drink after a short sobering up. The old wine is more fragile, it is best to put it in a decanter for a few minutes after getting out the lees and start drinking it!
